Winemaker's Notes: Petit Manseng is unique in that it possesses much more sugar when ripe than other varieties. We temper the acid by arresting the fermentation so the residual sugar can balance the acidity. This also tempers the alcohol production (where it would otherwise make a 15.5% alcohol wine if allowed to ferment dry).
Impressions: This wine exudes a ripe bouquet of tropical fruits interwoven with honey, both on the nose and palate. Its soft sweetness engages the front palate, while the acidity punches through on the finish.
