100% Chambourcin

An early pick of this varietal is an excellent candidate for sparkling wine as the acid and sugar levels are low early on in the ripening season.  Additionally, the bright cherry and raspberry aromatics of our Chambourcin rosé seemed to lend themselves to a sparkling wine.  The wine is produced in the traditional Méthode Champenoise, as well as hand bottled and hand disgorged.
